Jalisco is known for its blue agave fields, which stretch across the landscape and provide the raw material for tequila production. These agave plants are cultivated for several years before they are ready to be harvested and transformed into tequila. The volcanic soil and warm climate in Jalisco create optimal growing conditions for the agave plants, resulting in tequila with distinctive flavors and aromas.
Cierto Tequila is crafted by Master Distillers Enrique Fonseca and Sergio Mendoza, who have dedicated their lives to perfecting the art of tequila production. They follow traditional methods that have been passed down through generations, ensuring that every bottle of Cierto Tequila reflects the true essence of Mexican craftsmanship.
The production process begins with the harvest of mature agave plants, which are carefully selected for their quality and sweetness. The piñas, or the hearts of the agave plants, are then cooked in traditional brick ovens or autoclaves to release their sugars. This cooking process is crucial in developing the unique flavors of the tequila.
After cooking, the piñas are crushed to extract the juice, which is then fermented using naturally occurring yeasts. This fermentation process can take several days, allowing the sugars to be converted into alcohol. The resulting liquid, known as mosto, is then distilled in copper stills to further refine the flavors and remove impurities.
Cierto Tequila undergoes a double distillation process, which is believed to enhance the complexity and character of the spirit. The first distillation, known as the “ordinary distillation,” produces a liquid called “ordinario.” This liquid is then distilled a second time to create the final tequila.
Once the distillation process is complete, the tequila is aged in oak barrels to develop its smoothness and depth of flavor. The aging period can vary depending on the desired style of tequila.
