The Highlands region, also known as Los Altos, is located in the central part of Jalisco and is known for its high elevation and unique climate. This region is considered to be one of the best areas for tequila production due to its ideal growing conditions for agave plants.
Having personally visited the Highlands of Jalisco, I can attest to the breathtaking beauty of this region. The landscape is characterized by rolling hills, rich volcanic soil, and cool temperatures. These factors contribute to the slow and even ripening of the agave plants, resulting in a more complex and flavorful tequila.
One of the key factors that sets El Tesoro apart is its use of 100% estate-grown agave. The agave plants used in the production of El Tesoro are cultivated on the hillsides of the Highlands, where they benefit from the region's unique terroir. The volcanic soil provides essential nutrients to the agave, while the high elevation and cooler temperatures slow down the growth process, allowing the plants to develop more complex flavors.
During my visit to a tequila distillery in the Highlands, I had the opportunity to witness firsthand the meticulous process of harvesting the agave plants. The jimadores, skilled agave harvesters, carefully select and harvest only the ripest agave plants, ensuring that only the highest quality plants are used for El Tesoro tequila.
Once the agave plants are harvested, they are brought to the distillery where they undergo the traditional method of tequila production. The agave hearts, or piñas, are slowly cooked in traditional stone ovens, releasing the sweet and aromatic flavors of the agave. The cooked agave is then crushed and the juice is fermented and distilled to create the smooth and rich El Tesoro tequila.
