To begin with, Kah Tequila is made from 100% Blue Weber agave, which is considered the best agave for tequila production. The agave plants are grown in the region of Tequila, where the unique climate and soil conditions contribute to the character and flavor of the tequila.
The agave plants used for Kah Tequila are cooked in autoclaves, which are large pressure cookers that help to extract the sugars from the agave piñas, or hearts. This cooking process is essential for breaking down the complex carbohydrates into fermentable sugars, which will later be converted into alcohol during the fermentation process.
After cooking, the agave piñas are shredded using a roller mill. This mechanical process helps to extract the juice from the agave fibers, which is then collected and transferred to fermentation tanks. Kah Tequila follows a natural fermentation process, where no additional yeast or additives are used. Instead, the natural sugars present in the agave juice attract wild yeast from the environment, which initiates the fermentation process.
During fermentation, the sugars are converted into alcohol, creating a liquid known as “mosto” or “aguamiel.” This mosto is then double distilled on stainless steel stills to further refine the tequila and remove any impurities.
