Royal Oak Distillery, formerly known as Walsh Whiskey Distillery, officially opened its doors and began production in 2016. Located at Holloden House, a historic 18th century estate in Co. Carlow, Ireland's Ancient East, this distillery has quickly established itself as a prominent player in the Irish whiskey industry.
I had the privilege of visiting Royal Oak Distillery shortly after it opened, and I was immediately struck by the beauty and grandeur of the estate. The distillery is nestled amidst lush green fields, rolling hills, and ancient oak trees, creating a serene and picturesque setting for whiskey production.
During my visit, I had the opportunity to meet the passionate team behind Royal Oak Distillery and learn about their dedication to crafting exceptional whiskey. The distillery combines traditional distilling techniques with modern innovation, resulting in a unique and high-quality product.
One of the highlights of my visit was witnessing the production process firsthand. The distillery boasts state-of-the-art equipment, including copper pot stills and wooden fermentation vessels, which contribute to the distinct flavors and aromas of the whiskey. Speaking of maturation, the distillery has an impressive array of casks aging in its warehouses. These casks, made from a variety of wood types including oak, ex-bourbon, and sherry casks, add depth and complexity to the whiskey as it matures over time. It was fascinating to see rows upon rows of casks, patiently waiting for the whiskey within to reach its peak flavor profile.
