Still Austin Whiskey Co. is a grain to glass distillery located in Austin, Texas. Our process begins in the malthouse, whee we craft our own base malts from locally sourced grains such as corn, rye, and barley. We then mill the grains and mash them with water to convert the starches into fermentable sugars. The mash is then transferred to one of our custom-made open-top fermenters where it is inoculated with yeast and fermented for several days. The resulting beer is distilled in our custom-built copper pot stills to produce whiskey that reflects the character of its ingredients and the environment in which it was crafted. Finally, the spirit is proofed, cut with pure Central Texas Hill Country water, and bottled by hand at our distillery here in Austin.

Still Austin's bourbon is bottled at 98.4 proof (49.2% ABV). This cask strength release is even more intense, coming in at anywhere betwen 109-115 proof (54.5-57.5% ABV). The nose of both releases is surprisingly tempered, but the palate and finish become much more prominent with the cask strength release due to the higher alcohol content.
