Located on Stobcross Road in Glasgow, our distillery is rooted in the heritage of the area. Stobcross, the road where our journey began, holds a special place in our hearts as it symbolizes the beginning of our whisky-making process.
Water plays a crucial role in the production of our whisky. We are fortunate to have access to the pristine water of the River Clyde, which runs adjacent to our distillery. The water from the Clyde provides a unique character to our whisky, adding a subtle hint of freshness and purity.
Malted barley is another key ingredient in our whisky-making process. We carefully select the finest barley, which is then malted to unlock its natural sugars. This malted barley provides the foundation for the fermentation and distillation processes, ultimately shaping the flavor profile of our whisky.
Yeast, the third ingredient, is responsible for the fermentation process that converts the sugars in the malted barley into alcohol. We use a specific strain of yeast that has been cultivated for its ability to produce a complex and balanced flavor profile. The yeast interacts with the sugars during fermentation, creating a range of fruity, floral, and malty notes that are characteristic of our whisky.
Once the fermentation is complete, the liquid is distilled in our copper pot stills. These stills, with their unique shape and design, help to refine and concentrate the flavors of the spirit. After distillation, our whisky is aged in carefully selected oak casks. These casks play a crucial role in developing the character and complexity of the whisky.
