The highlands of Jalisco are located in central Mexico, where the elevation ranges from 1,500 to 2,000 meters above sea level. This higher altitude provides a cooler climate compared to the lowlands, which is crucial for the cultivation of the blue agave plant used to make tequila. The cooler temperatures slow down the growth of the agave, allowing it to develop more complex flavors and sugars.
The soil in the highlands is also rich in minerals, which further enhances the quality of the agave plants. The volcanic soil, in particular, is known for imparting unique characteristics to the agave, resulting in tequilas with distinctive flavors and aromas.
In Jalisco, the tequila production process begins with the cultivation of the blue agave plants. These plants take several years to mature before they can be harvested. The agave hearts, known as piñas, are then harvested and transported to the distillery for processing.
At the distillery, the piñas are roasted in traditional brick ovens or autoclaves to convert the starches into fermentable sugars.
