Los Osuna Blue Agave Spirits are made in the beautiful state of Sinaloa, located in northwest Mexico. Sinaloa is renowned for its rich agricultural land and ideal climate for growing agave, the key ingredient in tequila production. Being a sommelier and brewer, I have had the pleasure of visiting Sinaloa and witnessing firsthand the craftsmanship and dedication that goes into creating Los Osuna tequila.
Sinaloa is a region deeply rooted in tradition and heritage, which is reflected in the production of Los Osuna tequila. The agave plants used to make this exquisite spirit are grown in the fertile soils of Sinaloa, where they thrive under the warm sun and receive just the right amount of rainfall. The agave plants are carefully cultivated and nurtured for several years before they are ready to be harvested.
Once the agave plants have reached maturity, they are harvested by skilled jimadores, who expertly remove the leaves to reveal the heart of the plant, known as the piña. These piñas are then slowly cooked in traditional brick ovens, which imparts a unique flavor profile to the tequila. The cooked piñas are then crushed and the juice is extracted, ready to begin the fermentation process.
Fermentation is a crucial step in tequila production, as it is during this stage that the sugars in the agave juice are converted into alcohol. Los Osuna takes great care in ensuring a controlled and precise fermentation process, using only natural yeasts to ferment the agave juice. This natural fermentation allows for the development of complex flavors and aromas in the tequila.
After fermentation, the tequila undergoes distillation, which further refines and purifies the spirit. Los Osuna utilizes traditional copper pot stills to distill their tequila, a method that has been used for centuries and is known for producing superior quality spirits. The distillation process separates the alcohol from any impurities, resulting in a smooth and refined tequila.
Once distilled, the tequila is aged in oak barrels, allowing it to develop even more depth and character. Los Osuna offers a range of aged tequilas, from joven (unaged) to reposado (aged for a minimum of two months) and añejo (aged for a minimum of one year). Each aging period imparts its own unique flavors and aromas to the tequila, making Los Osuna a versatile and diverse spirit.
