Fiona Stewart, the daughter of the founder George Stewart, is the proud owner of Falkirk Distillery Company. As an expert sommelier and brewer, I have had the pleasure of meeting Fiona and experiencing firsthand her passion and dedication to the craft of distilling.
When I first visited Falkirk Distillery, I was immediately struck by the warm and inviting atmosphere. Fiona greeted me with a genuine smile and a firm handshake, instantly making me feel like a welcomed guest in her distillery. Fiona shared with me the story of how Falkirk Distillery came to be. Her father, George Stewart, had always dreamt of starting his own distillery and spent years honing his skills as a brewer. in 1999, his dream became a reality when he purchased a piece of land in Falkirk and began construction on what would soon become Falkirk Distillery.
Sadly, George passed away before he could see his distillery fully operational, but his legacy lives on through his daughter Fiona. Determined to carry on her father's vision, Fiona took over the reins of the distillery and has since grown it into a flourishing business.
One thing that stands out about Fiona is her commitment to quality and craftsmanship. She explained to me that Falkirk Distillery prides itself on using traditional distilling methods, ensuring that every bottle of whisky that leaves their doors is of the highest standard. Fiona personally oversees each step of the production process, from selecting the finest ingredients to meticulously monitoring the aging process.
During my visit, I had the opportunity to tour the distillery and witness firsthand the passion and attention to detail that goes into every aspect of production. Fiona took me through the entire process, from mashing and fermenting to distilling and aging. It was truly fascinating to see the transformation of raw ingredients into the smooth and complex whisky that Falkirk Distillery is known for.
As we walked through the aging warehouse, Fiona explained the importance of patience in the whisky-making process. She shared stories of her father's dedication to aging his whiskies for extended periods, allowing the flavors to develop and mature.
