Cognac, a type of brandy produced in the Cognac region of France, is known for its distinct flavors and aging process. Cognacs are classified into four grades based on their age and quality: Very Special (VS), Very Superior Old Pale (VSOP), Extra Old (XO), and Hors d'Age.
1. Very Special (VS):
Very Special, commonly referred to as VS, is the youngest and most affordable grade of Cognac. It is aged for a minimum of two years in oak barrels, although many producers age it for slightly longer. VS Cognacs tend to have a lighter body and a more vibrant, fruity flavor profile. 2. Very Superior Old Pale (VSOP):

The extended aging allows the Cognac to develop a rich and complex flavor profile with notes of caramel, spice, and dark fruit. XO Cognacs are considered luxurious and are often enjoyed neat or on the rocks.
4. Hors d'Age:
Hors d'Age Cognacs are the finest and rarest expressions. The term “Hors d'Age” translates to “beyond age” and signifies that the Cognac has been aged for an exceptionally long period, typically exceeding the minimum requirements for XO. These Cognacs are meticulously crafted and can be aged for several decades, resulting in unparalleled depth and complexity. Hors d'Age Cognacs are highly sought after by connoisseurs and are savored on special occasions.
It is worth noting that the age statements for Cognacs are based on the youngest eau-de-vie (distilled wine) in the blend. This means that a VSOP Cognac may contain some older eau-de-vie, contributing to its overall complexity.
The four grades of Cognac offer a range of flavors and aging profiles. While younger Cognacs like VS and VSOP are suitable for mixing in cocktails, the older and more expensive XO and Hors d'Age Cognacs are best enjoyed on their own to fully appreciate their refined and intricate flavors.
