What is babic wine?

Babić is a unique and indigenous variety that originates from the Dalmatia region in Croatia. As a sommelier and brewer, I have had the pleasure of tasting and working with Babić wines, and I must say, they are truly remarkable.

The Babić grape variety is known for producing dark, dense, and full-bodied wines that are highly valued in the wine industry. The wines have a rich and intense flavor profile, often characterized by notes of dark fruits, such as blackberries and plums, as well as hints of spices and herbs.

What sets Babić wine apart from other red wines is its distinctiveness. It has a unique combination of flavors and aromas that can only be found in wines made from this grape variety. The grapes themselves have thick skins, which contribute to the wine's deep color and robust structure.

In Croatia, Babić is also known by several other names, including Šibenčanac, Babica, Babićević, Roguljanac, and Pažanin. Within the Babić variety, there are two widespread sub-varieties – Babić veliki and Babić mali. These sub-varieties may have slightly different characteristics and flavor profiles, but they both produce exceptional wines.

One of the reasons why Babić wine is highly regarded is its ability to age well. These wines have a good potential for aging, allowing the flavors to develop and evolve over time. This aging process gives the wine more complexity and depth, making it even more enjoyable to drink.

I have had the pleasure of tasting both young and aged Babić wines, and I must say that they are equally impressive. Young Babić wines are vibrant and full of fruit flavors, with a good balance of acidity and tannins. As the wine ages, it develops more complex flavors and aromas, becoming smoother and more refined.

Babić wines are a perfect accompaniment to hearty and flavorful dishes. Their bold and robust character pairs well with grilled meats, stews, and aged cheeses. I have personally enjoyed Babić wine with a traditional Dalmatian dish called “pašticada,” which is a slow-cooked beef stew. The wine's acidity and tannins beautifully complemented the rich flavors of the dish.

Babić wine is a unique and indigenous red wine variety from Dalmatia, Croatia. Its dark, dense, and flavorful characteristics make it highly valued in the wine industry. Whether enjoyed young or aged, Babić wines offer a truly exceptional drinking experience.
