Wilderness Trail Distillery takes great pride in the fact that all of our whiskeys are completely distilled, aged, and bottled right here at our distillery in Kentucky. We believe in maintaining a rich traditional environment that truly embodies the essence of Kentucky whiskey.
When it comes to the production of our whiskeys, we are involved in every step of the process. We start by carefully selecting the grains that will be used in the mash bill, paying close attention to their quality and flavor profiles. Once the grains have been chosen, we grind them in-house and mix them with water to create the mash.
Fermentation is a crucial step in the whiskey-making process, and we take it very seriously. We use a proprietary yeast strain that we have developed over the years, ensuring that our whiskey has a unique and distinctive flavor profile. The fermentation process typically takes around four to five days, allowing the yeast to convert the sugars in the mash into alcohol.
After fermentation, the liquid is distilled in our copper pot stills. We take a traditional approach to distillation, carefully monitoring and controlling the process to ensure that only the best spirit is collected. Our distillers have years of experience and expertise, allowing them to make precise cuts and create a high-quality distillate.
Once the whiskey has been distilled, it is transferred to charred oak barrels for aging. We age our whiskeys for a minimum of four years, allowing them to develop rich flavors and aromas. During this time, the whiskey interacts with the wood, drawing out flavors such as vanilla, caramel, and spice.
After aging, the whiskey is carefully selected and blended to create the desired flavor profile. We take great care in ensuring that each bottle meets our high standards of quality and taste. Once the blending process is complete, the whiskey is bottled on-site at our distillery.
