8. Disgorging: Once the sediment has settled in the neck of the bottle, it's time to remove it. This is done by freezing the neck of the bottle, which causes the sediment to form a plug of ice. The bottle is then opened, and the pressure from the CO2 pushes out the frozen sediment. The bottle is quickly topped up with a mixture of wine and sugar, known as the “dosage,” to replace the volume lost during disgorgement. This step allows you to adjust the sweetness level of your sparkling wine to your preference.
9. Corking and aging: After disgorging, the bottles are corked with a traditional sparkling wine cork and secured with a wire cage. The wine is then aged for a few more months to allow the flavors to harmonize and the bubbles to settle.
